Satellite Republic will cook a four-course
dinner at the gallery drawing on the cuisine of the Caucasus. A suggested
donation cash wine bar will be available at 6:30 and dinner will be served

Satellite Republic is the new venture from
chef Boris Portnoy, a celebrated pastry chef, formerly of Meadowood Napa
Valley, which received three Michelin stars. A mobile moped food tricycle
exploring the cuisine of the former Soviet Near Eastern Republics, the
project researches the food and techniques of each region, from Georgia to
Uzbekistan, and is inspired by Portnoy’s childhood in Moscow, where he was
introduced to both cooking and these cuisines. Also influential are recent
travels throughout the Caucasus region, where Portnoy was impacted deeply by
the warmth and hospitality of the Georgian, Chechen, and Kist people.
Georgian culinary history draws from both
Turkish and Persian cuisine, resulting in a subtle balance of brightness and
fragrant spices that Satellite Republic aims to replicate. Portnoy is also
an adept moped mechanic, so the new venture combines two longstanding
interests. The moped trike from which he cooks is equipped with a tandir
oven, a traditional cooking method in near and central Asia. Satellite
Republic’s tandir was made by Napa ceramicist, and longtime friend and
collaborator, Lynn Mahon.
Satellite Republic grew out of Portnoy’s
recent interest in flatbreads, which are traditionally cooked in a clay
oven. Lamb is sourced locally from Don Watson in Napa Valley. Other
ingredients are also local, sometimes from Portnoy’s garden and sometimes
the result of bartering.
Proceeds from this event benefits Satellite
Republic’s participation in the 2012 Tbilisi Triennial.
